Idrija Žlikrof Festival — Idrija , Western Slovenia

Idrijski žlikrofi, as they’re known in Slovenia, are small, boiled dumplings that are most comparable with tortellini. They’re made from a softer pasta dough, with a filling of potato, onion, spices and lard. Very delicious on their own, and excellent when dressed or served with ‘bakalca’ sauce, made of ram or hare meat. The dish was widespread among Idrija’s local mining community at the start of the 20th century, and has experience quite a renaissance in recent years. Today Žlikrofi can be found either as a traditional dish, or as a modern version in contemporary cuisine.
The Idrija žlikrof is a Traditional Specialty Guaranteed (TSG) product registered in the European Union. Festival will be a showcase of this beautiful dish and will present the masterpieces of local manufacturers and chefs.v
